Smoked TroutWe are delighted to offer you this unique opportunity to enjoy the taste of our Hot and Cold Smoked Brown Trout. Highly prized by anglers, Brown trout are only farmed in very small numbers due to their wild and slow growing nature.

 

Delfour Fine Foods is based at our small, family-run hatchery at the base of the Monadhliath Mountains, where our fish are grown to the highest welfare standards. It is then hand-selected and smoked using traditional skills to give you a delicious and healthy taste of the Highlands.

 

We're delighted to have achieved Organic certification with the Organic Food Federation.

 

 

Cold smoked trout

 

Oak Smoked Native Scottish Organic Brown Trout - COLD SMOKED

Gently smoked with the same technique used for traditional smoked salmon, then thinly sliced, delicious with crusty wholemeal bread and butter, with a squeeze of lemon juice. 100g serves 3 as a starter, or two as a meal.

NB. The fish are not always of uniform size, and if the fillet size is less than 400g, we will make it up with a second fillet.

 

 

Hot smoked trout

Oak Smoked Native Scottish Organic Brown Trout - ROAST SMOKED

Smoked at a higher temperature, roast smoked Brown Trout is easily broken into succulent flakes, delicious alone or flaked into rice or pasta sauces. 150g serves 3 as a starter, or two as a meal.

Roast Smoked Organic Brown Trout combined with Crowdie, a traditional Scottish Curd cheese produced at a local family run organic dairy. Delicious on oatcakes.
